The Government is very nebulous on its definition of "Natural " foods - meaning only that it is minimally processed once it enters a packing house.
Niman has a very stringent protocol for what it calls Natural. |
FSE and their great staff and head Chef Dallas Parrish brought together a great menu and presentation. We had an open beverage station with a fine assortment of beer, wine and soft drinks with great Lady Aster Mini Bites. The appetizers were Pizza Bites, Reuben Bites, Ranch Bites, and Buffalo Bites.
Dinner:
Assorted grilled Steaks and Chops supplied by Niman Ranch and Buckhead Beef
Tyson Boneless, Skinless Tenderpress
Natural Redskin Garlic Mashed Potatoes
Eggplant Parmesan
Greenbean Mushroom Casserole
Ma's Kitchen Dinner Rolls and Butter
Country Home Desserts - assortment of decadent cookies
This was a great get together and wonderful presentation. Many thanks to Mike Casha and Buckhead Beef, Steve Esau and Niman Ranch, FSE, Randy, Dallas and their entire staff.

MIDDLE TN CHAPTER ACF -- Chapter Meeting April 21st, 2008

President Rawson asked that any visitors to introduce themselves.
Minuets from March 08, were read by Cathy Hoormann – they were approved as read. Treasurers Report for March 08 was given by Chef Anna Hicks. They were approved as read. Our membership chair, Michael Osborne then spoke about the changes coming. He asked that if anyone has changes for their files to let him know. He wants to be sure that we don’t miss out on any opportunities by not having correct addresses or phone numbers on file. He also is working with Tom Loftis on securing a location in Nashville for certification testing.
President Rawson introduced Eric Martin of Foodsales East. Eric wanted to let us know that it is a privilege and honor to co-sponsor our meeting along with Buckhead Beef.
