Lots of folks started arriving at 5:00 pm, and by 5:30 there were over 100 people at Food Sales East partaking in an hors d'oeuvres buffet. This cocktail hour was quite lively with lots of conversations and catching up. Many great purveyors participated in the festivities. Robert Orr/ Sysco set up a great fresh produce display, with hot appitizers and fruit. Roth Kase Cheese Company put out some delicious selections of their cheeses. The freshness, the creamy textures, and the distinctive flavors of Roth Kase Cheese was remarkable.

Paul Grand and Bethany of Lipman Bros. Distributors were kind enough to provide us with fine wine pairings. They brought a fine Chardonnay, a Fetzer Cabernet, Trinity Oaks and a well aged Noval Port to pair with the veined blue cheeses.
Below, Chef Mike Manista, a Corporate Chef for Nestles helped serve appetizers with their Regional flavor Concentrates. Lots of attendees showed up - Chefs Tom Loftis & Rick Martinez brought 12-14 of their students from Nashville State Community College, and Chef Willie Jemison brought several of his students from Murrell Middle School.

Rick Kahre opened the meeting with the Pledge of Allegience and a prayer.
Chef Tom Neville, past president and Board Chairman read the Culinarians Code, then introduced the Chapter Officers.
Tom did the service of srearing in the returning officers for another two years.

Cathy Hoormann read the minutes from the June meeting- they were approved as read. Anna Hicks read the treasurers report and it was approved as read.
As usual, both the minutes and the treasurers report are a part of the Chapters permanent record and are available for viewing through a request to the officers.

Time was taken to introduce any new members and guests to this meeting - and there were quite a few.

Chapter President Gary Rawson presented a 10 minute State of the Chapter Address where he reviewed our past year of activity, our current growth, and our plans for the future. He ended with a request for help on the 2007 Regional Convention coming up next April.

Chuck Olsen of Roth Kase Cheese gave us a few minute presentation of their Cheeses - Chucks Shirt Boldly announces:
"EAT CHEESE OR DIE"

Paul Grand of Lipman Bros. presented us a short talk on wine and cheese pairings - the principles involved and the selections made. Paul is always knowledgable and helps Chefs to accomplish their magic with beverage selections.

Eric Martin of Food Sales East took the floor and introduced our first speaker, Chef Mike Manista. a Corporate Chef of Nestles Corporation. Chef Manista introduced the Chapter to Nestles Ready to Use Flavors Concentrates.

Nestles is focusing on Regional Cuisine and features these new products

Soy Wasabi Ancho Chili
Miso Ginger Chipolte
Olive Herb Cilantro
Roasted Garlic  

The next speaker was Chef Fritz Schultz of Schwann Bakery.
He spoke on Nashville Regional food style. (Photo Below)

At the conclusion of the presentation, our Chapter held it's usual raffle drawing, then our Chef Host, Dallas Parrish, (Above right) opened the dinner buffet.

Dinner was spectacular, as it is every year at Food Sales East. They really go all out for the Chapter. Everything was first class and we really owe Dallas, FSE, Randy and Eric a real debt of gratitude for their support.
