The evening began with Appetizers and beverages.
Gordon Foods set up a wonderful display of international and American Cheeses, olives, crudites, nuts and dried fruits, as well as some delightful chutneys.
The Association provided a sampling of wines and beverages.

Meeting Opened: 6:18 pm at the American Legion Post 88 meeting hall with Gordon Foods as our host.
We received a welcome from our President Gary Rawson. Followed by the Pledge of Allegience and a prayer, led by VP. Chef Rick Kahre.

Introduction was made for Southeast Region V.P. Elizabeth Baase, CEC , who proceeded to give a 5 minute update on the State of the Region. This talk focused on the growth of the Region - in fact this region has grown larger and faster than the rest of the industry, resulting in great networking opportunities and prospering of the industry.

Treasurers report read by Anna Hicks - Approved
The minutes of the 10/20 meeting were read by R. Siegel, as Secretary Cathy Hoormann was at the March of Dimes - Signature Chefs representing the Association. Minutes were approved .

Johnathan King invited all to the December Christmas Gala - 6:00 pm to 8:00 pm - Delta Lounge - Gaylord Opryland Resort and Convention Center. Date will be finalized soon.
Robert Siegel gave a report of the Songwriters night hosted by our Chapter coming on April 29th, the first night of the Regional Convention. The committee heading up this event is comprised of Chef Rawson, Chef Michael Adams, and Chef Cathy Hoormann. It is a fundraiser for both our Chapter and for the Metro School Childhood hunger.
Willie Jemison announced that he had taken his class to the Union Rescue Mission and that he and the Students found it a rewarding trip. Willie recommends it to any who can give the time.
Gary then re-opened the floor for nominations for our annual awards. These awards will be given at our Banquet in January 2007. All nominees must be a member in good standing.

Purveyor of the Year: Food Sales East, Purity Dairy, Buckhead Beef, Fresh Point Overton, Gordon foodservice.
These additional awards will be given that evening.

Nominations were closed.
The educational portion of the evening was introduced by Bill Vickery of Gordon Food Service - first Bill introduced the service associates, sales team, and chefs from Gordon foods. Lastly, the speaker for the evening- Chef Gerry Ludwig was introduced.
Chef Ludwig introduced the theme for the Dinner - Latin Cuisine - gave a brief overview of the presentation and meal, then invited all to fill up their plates before he got into the middle of the presentation. |

Chef Ludwig's talk focused on 5 seperate points:
1. Industry Update 2. Asian Update 3. Latin Influence 4. The Future Sandwich 5. Personal Favorites
The industry update focused on the misconception that people are eating out more; more women are in the market cooking less; and the silliest misconception, that people are wanting smaller more dietarily correct portions and foods.
The Asian update focused on how new dishes have infused their way into the American Menu. Okonomiyaki, Kushikatsu, Robata Grill, Kushiyaki, and Mandu dumplings are all foods that were pointed out 18 months ago, and have now gotten rather popular.
The Latin Influence Highlighted our dinner - and gave sampling of Peruvian, Honduran, Salvadorian, Colombian and Mexican dishes of interest.
The Future Sandwich focused on the Bocadillos - a latin tapa or small sandwich, the Pannino, the Tortas, and the Bao.
Personal Favorites was a true melange of unusual dishes, which can be seen on the CD that Chef Ludwig made available to any who wanted one.
Chef Ludwig concluded with a couple of remarks about how good an audience we were and everyone went for desserts.
