We received a welcome from our President Gary Rawson. Gary thanked our Host for their generosity and support.
We all stood for the Pledge of Allegiance and Gary read the Culinary Code.
Minuets of September 2006 meeting were read by Cathy Hoormann – they were approved as read.

Treasurers Report : Gary advised that Anna Hicks is ill and she will give us an update on September 2006 Treasurers Report, along with October 2006 report at the November General meeting.
Please note that both the Minuets and Treasurer Reports are on file with Chapter Secretary. You may request to review these documents with your board or officers at anytime.

Nancy Campbell our Good & Welfare chair advised that she is sending a card to one of our members Crystal Russel’s son has a sever injury.

Gary then opened the floor for nominations for our annual awards. These awards will be given at our Banquet in January 2007. All nominees must be a member in good standing.

Professionalism: Robert Siegel, Rick Kahre, Michael Osborne
Bill James Award: Michael Osborne, Michael Adams, Willie Jemison
Hospitality: All Chefs and Venues that sponsored meetings in 2006 will be listed in this category.
Purveyor of the Year: Food Sales East, Purity Dairy, Buckhead Beef, Fresh Point Overton

In addition to these awards there are the following that will also be awarded that evening.

Chef of the Year: This award is voted on by past Chef’s of the Year and will be presented by Rick Kahre Chef of the Year 2005.

Linda McClanahan coordinator for the YMCA Chef’s Auction Event invited us to their Event that will be held Oct. 19, 2006 at Ravenwood Club in Hermitage. It is to fund their programs for positive development. She handed out flyers to anyone who needed further information.

We were then introduced to our educational speaker for the evening.

John Clampet of the American Red Cross. The Middle TN Chapter handles the task of emergency response for 10 counties including Davidson. The main function of the mass care team is to feed and shelter their clients.

When they are called the set up staging areas with snacks and liquids. After 24 hrs to 72 hrs they set up ERV (Emergency Response Vehicles) that provide Hot meals consisting of 2200 calories (Entrée 8 oz/ 2 6oz sides Veg. or Fruit/ Bread / desert). These mobile units feed 300 people.

This is were the Middle TN Chapter or Chef’s who have their own business could be of assistance. Naturally the Red Cross accepts donations, however they do partner with people to provide meals. Most of the time they pay between $4-6 per client to stock the hot meals that are distributed on the ERV. At this time the ACF-MTNC is considering setting up a contact list that will work with the American Red Cross to coordinate a list of participants. We will be working on this goal in the next few months.

After the presentation inside was completed we were treated to a tour of the ERV parked in the doc area of the Curb Event Center.

We then were treated by a delightful meal prepared by Chef Dorr and the Sodexho staff in the Belmont University Café.

Gary thanked our sponsors and guests speakers for the evening.

Our meeting was adjourned at 7:15

Chef Kevin Dorr and his staff prepared a dinner fit for royalty.

Our Salad was a delicious melage of baby arrugula with roasted butternut squash, complimented with a French onion soup, Lavosh, herbed sourdough roll, and a cheese fuitallage.

Dinner was stellar - Duck Confit and braised shortribs with a flavorful demi-glace - pureed root vegetables as garniture. This is great eating.

The pastry chef graced us with a number of wonderful pastries including a passion fruit bavarois created in the shape of a deviled egg.

Our gratitude to Belmont College and Kevin Dorr C.E.C. for their hospitality.
